Whole30 Breakfast Round Up

I was hoping to share a little more on my Whole30 Challenge and how I’ve been doing on the challenge. But, unfortunately I’ve been dealing with a sinus infection for the past 2 weeks and I just didn’t feel well enough to write a post on my progress.

So how have I been doing on the Whole30 Challenge? I am happy to report that my Whole30 ended yesterday, and today I start on full Paleo. I must admit though that around the time my sinus infection started, I had a major craving for bread. I think it was because I was looking for some kind of comfort food (yes I find bread comforting) to help me feel better. But I overcame the craving and did not touch any bread. But otherwise I do not miss bread!

I have enjoyed the Whole30 challenge and I am looking forward to seeing how the Paleo lifestyle will benefit me.

One of my struggles on the Whole30 was what I was going to eat for breakfast each morning. I was afraid that if I would eat the same thing each morning I would grow tired of it. About my Berry Banana Nut Breakfast Porridge

N'oatmeal Mix

I thought that I would struggle with giving up Oatmeal and Cereal for breakfast, but then I discovered N’oatmeal and I haven’t missed oatmeal one bit!

N’oatmeal is so quick and easy to make. You can easily whip up the mix in less than 5 minutes and then store it in the fridge for whenever you need it. Plus you can use any fruit you wish for the porridge.

Berry Banana Nut Breakfast Porridge

If you like Oatmeal, then you will love N'oatmeal if you are Paleo. It has a very similar taste and texture to oatmeal. This is a quick and easy breakfast option for any morning.

Ingredients

    N'oatmeal Mix
  • 1 Cup Almond Flour
  • 1 Cup Shredded Unsweetened Coconut
  • 2 tsp. Cinnamon
  • 1/4 tsp. Sea Salt
  • Berry Banana Nut Breakfast Porridge
  • 1/4 Cup N'oatmeal Mix
  • 1/2 Banana
  • 1/3 to 1/2 Cup DF Milk
  • Any kind of berries or fruit, for serving
  • Almonds, for serving

Instructions

For the N'oatmeal Mix:

Whisk together all of the ingredients. Place into a glass jar with a lid and store in the refrigerator until ready to use.

For the Berry Banana Nut Breakfast Porridge:

Mash the banana into the bowl. Add in the N'oatmeal mix, and your choice of milk. Blend until smooth.

Place in the microwave for 1-2 min. Stir and let stand for 2 min.

Place your choice of fruit and almonds on top before serving. Add in an extra splash of coconut milk, if desired.

Notes

If you can't find Almond flour at the store, you can make your own almond flour. Just place the almonds into a blender or food processor and pulse until you reach a fine powder. Be careful not to blend too much, otherwise you will end up with almond butter. As soon as you notice it's becoming a powder, stop blending!
