Before I went Gluten Free, one of my favorite things to eat was KFC’s Famous Bowls which are layered with mashed potatoes, sweet corn, chunks of crispy chicken, and homestyle gravy over the top.
Instead of mourning the fact that I would never be able to eat KFC’s Famous Bowls again, I decided to come up with my own version, but with a few minor changes. Instead of regular mashed potatoes, I use mashed sweet potatoes, there is no sweet corn, but there is my version of homestyle gravy and crumbled cornbread over the top. Can you say YUM! Are you drooling yet?
Val’s Famous Chicken Dinner Bowl
4 to 5 Chicken Breasts, cut into chunks
4 Sweet Potatoes, diced, cooked, and mashed
1 tbsp. DF Butter
1 tbsp. GF Flour
2 Cups Chicken Broth
Salt & Pepper, to taste
2 Garlic Cloves, minced
GF Cornbread Biscuit Mix, baked according to package directions and crumbled
Boil the potatoes until they are soft. Drain and place them in a bowl. Mash the sweet potatoes to your liking. Set aside.
Cook the chicken until cooked through. When the chicken is fully cooked, remove from the pan and set aside.
In the same pan the chicken was cooked in, melt the butter and add the flour and cook for 1 min. Pour in the chicken broth, salt, pepper, and minced garlic. Bring to a simmer and cook until it reaches the consistency of a gravy.
In a bowl, place the sweet potatoes, followed by the chicken, gravy, and then the crumbled cornbread biscuits._
