I have a confession to make! I have a MAJOR sweet tooth………………………and so does my husband! We both love sweets, but we always try to limit ourselves when it comes to sweets because we don’t like to over do it and also because we do our best to stay on the right path when it comes to eating healthy.
But, you gotta be naughty sometimes right? And this is one of those times! I have never had Fried Ice Cream before, and I wanted to try something that I’ve never had before. My husband, on the other hand, has had Fried Ice Cream before and he was looking forward to my version of it.
So how did it end you ask? Well, if you must know we both enjoyed every single last bite and we have no regrets! It was so over the top delicious that this is something that we will be having several more times before the summer is over.

Unfried Fried Ice Cream
1 Container DF Vanilla Ice Cream
1/4 Cup GF Special K Cereal
1/4 Cup Peanuts or 5 GF Graham Crackers or use both
1/2 Cup DF Butter
2 tsp. Cinnamon
3 tbsp. Granulated Sugar
Possible Toppings: Caramel Sauce, Hot Fudge Sauce, Chocolate Sauce, Coconut Whipped Cream
Scoop the ice cream into 2 1/2 – inch balls. Place the formed ice cream balls onto a cookie sheet covered with parchment paper for about 20 min.
Place the cereal, and peanuts into a food processor. Pulse the mixture enough so that there is some texture or chunks left to it. I couldn’t decide if I wanted to use peanuts or graham crackers so I used both. Another yummy option possibly would be to use granola. I might try that the next time I make this!
Melt the butter in a pan over medium heat. Stir in the Special K/Peanut mixture and the cinnamon and cook. Stir continuously for 3-5 min. or until the mixture is golden brown. Remove from the heat and stir in the sugar. Pour into a shallow dish and allow it to cool.
Remove the ice cream balls from the freezer and press the Special K/Peanut mixture onto the ice cream balls, making sure the mixture sticks. Place the ice cream balls back into the freezer for 15 min. to re-harden.
Top with some of your favorite toppings.
