Slow Cooker Meatball Stew

I don’t use my slow cooker very often during the Spring & Summer months. But I needed to make a meal yesterday that didn’t require a lot of time in the kitchen because we went to a christian concert last night that featured Bread of Stone, Shawn McDonald, and Kutless!

The stew was DELICIOUS and the concert was awesome! I had every intention of bringing my camera along so I could share a few pics of the concert, but unfortunately I forgot to bring my camera (that always seems to happen)!

This meatball stew is so easy to make¬†especially if you need a quick meal on a busy night and it’s also satisfying too!

Meatball Stew

2 lbs. Ground Beef

2 tbsp. Parsley

3 carrots, diced

3 stalks celery, diced

1/2 yellow onion, diced

3 Cups Beef Stock

1/4 cup DF Butter

1/4 cup GF Flour

Salt & Pepper, to taste

Mix the ground beef and the parsley together and form into meatballs. Place the meatballs into a crockpot with 1 cup of beef stock. Let the meatballs cook until they are no longer pink. Add in the carrots, celery, onion, and 2 cups beef stock. Cover and cook on low for about 5 hours.

Remove 2 cups of the beef stock from the crockpot and set aside.

In a pan over medium heat melt the butter. Add the flour and whisk until there are no clumps. Add in the reserved beef stock and whisk until thickened. Add the salt & pepper.

Pour the beef gravy into the crockpot and stir to combine. Cook for about 10 min. longer to allow the sauce to thicken.
