Slow Cooker Ham & Bean Stew + An Important Video Announcement

Fall is not my favorite time of year because that usually means that Winter is right around the corner. But, the only reason I like Fall is I get to dig out my slow cooker more often. I try to dig out my crockpot other times of the year too (like during the summer months) but for some reason the idea of a slow cooker meal during the summer doesn’t appeal to me.

Even though it isn’t officially Fall as of yet (almost there) I thought it was a good time to finally dig out my slow cooker because I wanted soup!

This soup is AMAZING! I have made Ham & Bean Stew many times before, but this time, this stew is my favorite way to make Ham & Bean Stew. It is loaded with delicious and good for you ingredients such as kale, sage, and garlic. What would make this stew even better is if you were to serve it with Cornbread (I did not get to have cornbread with mine because I only thought of the cornbread idea after I started eating it, but I will consider it next time).

Slow Cooker Ham & Bean Stew

Ingredients

    Ham & Bean Stew
  • 1 lb. Navy Beans, sorted + rinsed
  • 2 Cups Cubed Ham
  • 1 Yellow Onion, chopped
  • 3 Cups Homemade Bone Broth or Chicken Broth
  • 1 1/2 tsp. Homemade Herbes de Provence
  • 1/2 tsp. Ground Black Pepper
  • 1/4 tsp. Nutmeg
  • 3 Garlic Cloves, minced
  • 2 tbsp. Fresh Sage, chopped
  • 1 tsp. Sea Salt
  • 6 tsp. Lemon Juice
  • 2 Cups Kale, chopped
  • 1/4 Cup Fresh Parsley, for garnish
  • Herbes de Provence
  • 1/2 tsp. Thyme
  • 1/2 tsp. Savory
  • 1/2 tsp. Oregano
  • 1/2 tsp. Rosemary
  • 1/2 tsp. Parsley
  • 1/2 tsp. Sage
  • 1/2 tsp. Marjoram
  • 1/2 tsp. Basil
  • Pinch of Sea Salt

Instructions

For the Ham & Bean Stew

Place the beans, ham, onion, chicken broth, herbs de provence, garlic, black pepper, and nutmeg into a slow cooker. Cover and cook on low for 8 hrs.

1 hr. before serving, stir in the kale, sage, lemon juice, and salt. Cover and continue to cook.

Garnish with parsley before serving.

For the Herbes de Provence

Place all of the herbs into a bowl and mix to combine.

    Your stew looks delicious. It’s similar to my recipe, except I’ve never added kale, nutmeg, or cloves. It sounds interesting though, and I’ll definitely be experimenting with my seasonings next time I make ham and bean soup!
