Savory Chicken & Waffles with Maple Gravy

Waffles are starting to become a BIG favorite at our house! Earlier in the week my husband requested waffles for breakfast for Saturday morning. So all week I was thinking about what kind of waffles I wanted to make so I decided to come up with a recipe for Savory Chicken & Waffles.

Let’s just say that it was so good that I wanted to savor every last bite. What a great idea for a Saturday morning breakfast!

Savory Chicken & Waffles

Chicken

1 Cup GF Cornflakes

2 Chicken Breasts

Small Sprinkling of Rosemary

1 Egg

1 Garlic Clove, minced

Salt & Pepper

Waffles

2 Cups Yellow Cornmeal

2 Green Onions, finely chopped

1 tbsp. Basil

Small Amount of Chives

1 Garlic Clove, minced

1 Cup DF Milk of your choice

2 Eggs

1 tbsp Olive Oil or Melted Coconut Oil

Dash of Salt & Pepper

For the chicken: You are going to want to start with the chicken since it takes the longest.

Preheat the oven to 375 F.

In a food processor, grind the cornflakes, garlic cloves, and rosemary and pulse until it resembles a coarse meal. Pour the cornflakes into a bowl.

In another bowl, whisk the eggs.

Season the chicken with salt & pepper. Dip the chicken into the eggs and then the cornflake mixture. Place the chicken onto a prepared baking sheet and bake for 25 to 30 min.

For the waffles: After the chicken is in the oven, then you can get started with the batter for the waffles.

Combine all the waffle ingredients in a bowl and mix until well combined.

When the waffle maker is hot add the coconut or olive oil, then add the batter to the waffle maker and cook until a golden brown and crispy.

Serve Maple Gravy on top of the chicken and waffles. I did not come up with the recipe myself for the maple gravy. Please click here to see the recipe I used for this.
