Every year, during football season, I usually make some sort of football treat for Sunday football games, especially if the Minnesota Vikings are playing. My husband is a native Minnesotan, so he loves the Vikings.

Even though the Vikings didn’t play yesterday (they play the Chicago Bears tonight), I decided to make some football snacks.

Are you ready for this? Are you sure? I bring you LOADED SWEET POTATO BITES!!! All kinds of YUM!

Loaded Sweet Potato Bites

My husband is always praising my cooking and creativity in the kitchen. But my newest game day treat, my husband decided to give me a new title of CULINARY ARTIST! I think I like the sound of that!

These loaded sweet potato bites made our mouths sing for joy. And they are addicting! I was only going to eat like 6 of them, but I ate more than that! I can’t officially tell you how many I got out of the batch because I got so excited about these little bites, that I forgot to count!

But, I am guessing that I got about 46 sweet potato bites from this batch, and that was from 3 sweet pototates!

The next time I make these (and YES, I most certainly will be making these again), I might try a different topping like pulled pork or chicken or something like that! I get so hungry whenever I think about these little bites!

Loaded Sweet Potato Bites

Ingredients

    Spice Mix
  • 1/8 tsp. Cumin
  • 1/8 tsp. Turmeric
  • 1/8 tsp. Black Pepper
  • 1/2 tsp. Dried Oregano
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Garlic Powder
  • Sweet Potato Bites
  • 2-3 Sweet Potatoes, cut into slices
  • 2 tbsp. EVOO
  • Toppings
  • 6 pieces of Turkey Bacon, cooked & crumbled
  • 4 Green Onions, thinly sliced
  • Guacamole
  • Sour Cream
  • Cilantro

Instructions

For the spice mix:

Place all of the spice ingredients into a bowl and mix.

For the sweet potato bites

Place olive oil and the spice mix into a bowl with the sweet potatoes and stir to coat.

Place the coated sweet potato slices onto a baking sheet lined with parchment paper.

Place into a 425 F. oven for 10 min. Remove from the oven and flip the rounds and bake for another 10 min. until soft.

When the potatoes are done, remove them from the oven and top each round with your desired toppings.

    This recipe is such a win in my book! I have so much love for sweet potatoes and this is loaded with everything I adore in it!! <3!
