Grilled Lemon Orange Chicken & Wild Rice Salad with Orange Vinaigrette Dressing

I am a HUGE fan of Rachael Ray. I pretty much watch her show everyday and I am always inspired by her recipes.

Back in September, she featured a recipe on her show that I have made numerous of times, but then a few days ago I had this thought about turning it into a salad with a delicious orange vinaigrette dressing.

Click here to see Rachael Ray’s original recipe. I pretty much just used her recipe as is , except I excluded a couple of things from the recipe. For the rice part I used a brown & wild rice blend that I found at the grocery store.

For the salad


Black Olives

Tomatoes (Optional)

Dairy Free Cheese (optional)


Orange Vinaigrette Dressing

1/4 cup Extra Virgin Olive Oil

1/4 cup Fresh Orange Juice (that would be about 2 oranges)

2 tbsp. Orange Zest

1 tbsp. Honey

2 tbsp. Apple Cider Vinegar

Salt & Pepper, to taste

Add all ingredients to a container with a lid. Close the lid and shake the vinaigrette to combine all the ingredients.


Shake the vinaigrette again before adding to a salad because the ingredients in the vinaigrette will separate. 

As for assembling the salad, you can assemble it however you wish. But I assembled mine with spinach on the bottom, followed by the wild rice, onions, pine nuts, chicken, lemons, and the vinaigrette.
