For the first time I had my very first experience with lamb! I have been wanting to try lamb for a while now, but we had a hard time finding some in our area. But then a few days ago my husband had to make a quick trip to the grocery store and he spotted some so he grabbed it.
Lamb is now one of my new favorites!
Grilled Lamb Kebabs w/ Mint Sauce
Lamb, cut into chunks
1 Red Onion, cut into chunks
1 Cup of Pineapple, cut into chunks
1/2 cup Extra Virgin Olive Oil
Handful of Fresh Mint, chopped
2 Garlic Cloves, minced
1 tbsp. Lemon Zest
Salt & Pepper, to taste
In a food processor, place the olive oil, mint, garlic, lemon zest, salt & pepper and blend on low speed.
Place half of the mint sauce into a ziploc bag with the chunks of lamb and marinate in the fridge for at least 2 hours. Place the remainder of the mint sauce in a container and store it in the fridge.
If you are using an indoor grill, get the grill ready to go so that the grill is warm when you place the kebabs on the grill.
On each skewer, place lamb, onion, and pineapple until you reach the desired amount on each skewer.
Place the kebabs on the grill and grill them for about 20 min. You will need to flip them a couple of times during the cooking process.
Serve the remaining mint sauce on the side with the kebabs.
