The Best Shrimp Scampi

 

I love Shrimp Scampi!!! I’ve had many versions of Shrimp Scampi throughout my life, but this one is by far the best! I’m at a loss for words right now!

The Best Shrimp Scampi

1 lb. Shrimp, peeled and deveined

GF Linguine or Fettuccini

3 tbsp. Olive Oil

1 tbsp. Dairy Free Butter

 4 Cloves minced garlic

Salt, and Black Pepper, to taste

1 tbsp. Lemon Zest

A little bit of Parsley

4 tbsp. Fresh Lemon Juice

1/2 Lemon, thinly sliced

Heat olive oil and butter in a large pan. Add the garlic and sauté.

Add the shrimp, salt and pepper and cook until the shrimp is cooked. Take the pan off the heat and add the lemon juice, lemon zest, parsley, and lemon slices. Toss to combine.

Cook the pasta according to package directions. Drain the pasta and add it to the shrimp mixture and toss.

    OMG! I LOVE shrimp scampi! But no one else in my house eats seafood! This looks SO GOOD though I might have to make it for myself. 🙂

    This looks like a quick and easy weeknight dinner that feels a little fancy. My favorite! & made with things I usually always have on hand.

    My favorite scampi recipe is very similar to this and comes from Joy of Cooking. I serve mine over white rice. Yum!

    I don’t like seafood at all – strange as I’ve lived on an island all my life. Great dinner option for those who do though 🙂

    I got so confused when I looked at the title at the pictures! Scampi in the UK is battered fish like prawns. It’s so funny that different countries use the same words for different things! I think I’d prefer your recipe though!
