I have had pizza on my mind all week! Usually when I make pizza I usually use Bob’s Red Mill Gluten Free Pizza Crust mix, but this time I wanted to try something a little bit different. This time I made a Cauliflower Pizza Crust.
I have to admit I was a little bit nervous because I never made this kind of crust before and also I wasn’t sure how well it would turn out. But I am happy to report that it turned out better than I thought it would and it tasted pretty amazing too.
Cauliflower Pizza Crust
2 Cups Ground Cauliflower Florets
1/2 cup GF Flour (you might need a little bit more if your crust gets sticky)
3 tbsp. Nutritional Yeast
Pinch of Salt & Pepper
Small Handful of Oregano
Small Handful of Basil
Chop the cauliflower in a food processor until it resembles the look of rice. If your cauliflower appears wet, place it in the microwave for about 8 minutes to dry it out.
Whisk in the eggs and mix in the flower, nutritional yeast, salt, pepper, oregano, and basil and form it into a ball. If your crust is sticky, you can add more flour.
Gently knead it a couple of times, adding more flour on top if necessary.
Place the dough ball on a pizza pan with greased parchment paper on top. Mold the dough into a crust.
Bake the crust for about 15 to 20 min. then top with the toppings and bake again for 10-15 min.
White Garlic Sauce
2 tbsp. DF Butter
1 1/4 DF Milk
3 tbsp. GF Flour
Salt and Pepper, to taste
3 Garlic Cloves, minced
1/2 Cup Shredded DF White Cheese
While the crust is baking in the oven, you can start making the garlic sauce.
Melt the butter in a saucepan over medium heat. Whisk in the flour until there are no lumps. Gradually whisk in the milk, and add the salt, pepper, and garlic. When the garlic sauce gets thick, then add in the white cheese and stir until melted. Remove the sauce from the heat.
4 Chicken Breasts, cooked & diced
1/2 cup Mushrooms
1/2 Red Onion, chopped
1/2 cup Artichoke Hearts, chopped
1 Cup Spinach
To assemble the pizza: Spread the garlic sauce on the bottom, followed by the spinach, artichokes, mushrooms, red onion, chicken, and cheese.
Bake in the oven at 375 F. for 10-15 min.
