Banana Bread Oat Waffles (Gluten Free)

When I woke up yesterday morning I had waffles on my mind, so of course I had to fulfill this craving of mine. 

These Banana Bread Oat Waffles are so filling that you don’t need 1 whole waffle to feel satisfied, it only takes half. My favorite thing about these waffles is the oat flour because it gives the waffles a nice texture.

Banana Bread Oat Waffles

2 Cups GF Oats, processed into oat flour

2 Cups DF Milk

1 Ripe Banana Mashed +2 chopped bananas to caramelize

2 tbsp. Coconut Oil

1 tsp. Baking Powder

1/2 tsp. cinnamon

Handful of chopped walnuts

Preheat the waffle iron with coconut oil.

In a large bowl, mix the mashed bananas, milk, and oil. Add in the oat flour, baking powder, and cinnamon. Mix until well blended. Let it sit for about 5 min. to thicken up.

While the waffle mixture is thickening, you can get started with the caramelized bananas. In a pan add 2 tbsp. butter and let it melt. When the butter is melted add the 2 chopped bananas and about 1 tbsp. of brown sugar and cook until caramelized.

Drop the waffle batter into the waffle iron.

Serve topped with chopped walnuts, caramelized bananas, and maple syrup.
