Easy Pumpkin Soup

It is Fall which means pumpkin recipes GALORE!!! I have seen so many pumpkin recipes lately that it has made me hungry for something pumpkin. So, my first Pumpkin quest had to be in the form of a soup.

My quick and easy pumpkin soup is now a new favorite at my house. It is both thick and silky, and best of all it is so quick and easy to make.

I must admit that I cheated a little bit here though. How did I cheat you ask? I did not use fresh pumpkin, I used canned pumpkin instead. I know, I know! Please don’t judge! I thought about using fresh pumpkin, but when I went to the grocery store to look at fresh pumpkins, all they had was big ones, and I didn’t need that much pumpkin, and also I just couldn’t see myself carving into such a big pumpkin.

But, if you want to use fresh pumpkin for this recipe, you sure can!

I made some pretty yummy Turkey Panini’s to go with my Pumpkin soup. I thought about giving you a bonus recipe here, but I decided at the last minute that I am going to remake. better yet, makeover my Panini recipe and share it with you in a couple of weeks. Cause hey, you guys deserve the best!


Quick & Easy Pumpkin Soup

  • 2 Cans Pumpkin Puree
  • 2 Shallots, diced
  • 3 Garlic Cloves, minced
  • 2 Cups Chicken Broth
  • 1 Can Coconut Milk
  • 2 tbsp. Maple Syrup
  • 1/4 tsp. Sea Salt
  • 1/4 tsp. Black Pepper
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. Nutmeg
  • 1/2 tsp. Dried Sage
  • 3 strips Crispy Turkey Bacon, crumbled


In a large saucepan over medium heat add 1 tbsp. olive oil, shallot and garlic. Cook for 2-3 min. or until slightly browned and translucent.

Place a large pot over medium high heat. Add in the chicken broth, pumpkin puree, coconut milk, salt, pepper, cinnamon, nutmeg, shallot mixture, maple syrup and sage. Stir. Reduce the heat to medium. Cover and cook, stirring often, until it comes to a simmer. Reduce the heat to low.

Ladle the soup into bowls and top with bacon crumbles.


You can easily use fresh pumpkin instead of canned in this recipe, if you wish!
