My favorite kind of fish is any kind of crispy fish. Ever since I became Gluten Free, I’ve been trying to perfect my recipe for crispy fish, and usually it turns out soggy or not crispy at all. But I think I finally found the magic formula!
On the side we had some left over Pumpkin Mac & Cheese.
Extra Crispy Tilapia
- 2 Tilapia Fillets
- 4 tbsp. Olive Oil
- 2 Cloves of Mashed Garlic
- 1 tsp. salt
- Pinch of Black Pepper
- 2 tsp. Fresh Lemon Juice
- 1/2 tsp. Grated Lemon Zest
- 1 Cup GF Breadcrumbs (I usually make my own)
- Lemon Slices for garnish
Place the tilapia in a ziploc bag. Add 2 tbsp. olive oil, mashed garlic, salt, pepper, paprika, lemon juice, and lemon zest to the ziploc bag, and marinate for at least 2 hrs.
In a dish, mix together the breadcrumbs, salt, paprika, and pepper. Dredge the tilapia in the breading.
Add olive oil or coconut oil to a pan over medium heat.DO NOT ADD THE TILAPIA TO THE PAN UNTIL THE PAN IS WARM. Pan fry the tilapia for about 4 min. on each side or until golden brown.
Serve with lemon wedges.
