I love Crispy Chicken Sandwiches! I have been trying to come up with the right recipe for a sandwich like this since I became Gluten Free and I think I did it!
This sandwich hits the spot and your taste buds will sing hallelujah every time you take a bite!
When I was making this recipe, I originally was going to fry it in a frying pan and then place it in the oven to finish the cooking process. But at the last minute I decided to grill instead, and I am so glad that I did!
Crispy Grilled Chicken Club (Gluten Free)
4 chicken breasts
1 cup Canned Coconut Milk
2 Garlic Cloves, minced
Salt & Pepper, to taste
1/2 tsp. Paprika
1 1/2 Cups GF Flour, for breading
2 eggs, beaten
Crispy Turkey Bacon
GF Hamburger Buns
Place the chicken in a ziploc bag with the coconut milk, salt, pepper, and garlic. Mix the marinade into the chicken. Let marinate in the fridge for at least 20 min. You can marinate for longer, if you wish.
In a bowl, mix flour, black pepper, paprika, and mix to combine.
In another bowl, add the beaten egg.
Remove the chicken from the marinade, and dip the chicken into the egg, and then dredge the chicken into the flour mixture. Place the coated chicken onto an indoor grill. Grill chicken until cooked.
To assemble the club sandwich, place the romaine lettuce on the bottom of the bun, followed by the bacon, and then the crispy chicken.
