I don’t know about you, but I just love having a little snack while watching a movie. I like my snacks a little bit salty and a little bit sweet, and sometimes I even like it savory (but there is nothing savory about this snack).
After feasting on Thanksgiving last week, I didn’t think I would want to indulge in any kind of snack because I just needed some time to recover from the holiday. But, I had to deal with my chocolatey, salty, sweet craving somehow. And best of all, this snack is healthy!
This Chunky Monkey Snack Mix is the perfect combination of chocolatey, salty, and sweet

1/2 Cup Almonds
1/4 Cup Unsweetened Coconut Flakes
5 tbsp. Coconut Oil
1/3 Cup + 2 tbsp. Cocoa Powder
1 tsp. Vanilla Extract
3 Cups Plain GF Cheerios
2 Cups GF Pretzels
1/4 Cup Banana Chips
1/4 Cup DF Chocolate Chunks
Preheat the oven to 350 F. Place the almonds onto a baking sheet and roast for 10 min. Remove from the oven and let cool. Once cool, place the roasted almonds into a bowl with 2 tbsp. cocoa powder and mix. Set aside.
Heat a pan over medium heat and toast the coconut flakes for a few minutes. Watch carefully so the coconut does not burn. Transfer the toasted coconut flakes into a bowl and set aside.
Melt the coconut oil in a saucepan.
Place the cooled almonds and coconut into a bowl. Add in the cheerios, pretzels, coconut oil, 1/3 Cup Cocoa Powder, and vanilla extract. Give the mixture a stir. Add in the banana chips and chocolate chunks, and mix again.
Place the snack mix in the fridge covered so that it can set up.
You can easily switch out the cocoa powder for Cacao in this recipe.
