My husband and I have had a case of the munchies lately, and I think it’s because it’s winter, it’s cold, and we just don’t know what to do with ourselves besides EAT! So to help use with our case of the munchies, I’ve been trying to get into the habit of making homemade granola.
Granola is one of those satisfying snacks that you can enjoy for breakfast or as just a snack to munch on throughout the day. I think my favorite part about granola is the little crunchy clusters.
Blueberry Orange Granola
3/4 Cup Dried Blueberries, unsweetened
1 tbsp. Orange Zest
2 1/2 Cups GF Oats
3 tbsp. Ground Flaxseeds
1/2 Cup Almonds
1/4 Cup Honey
2-3 Drops Orange Essential Oil or 1 tsp. Orange Extract
1/4 Cup Coconut Oil, melted
Preheat the oven to 325 F. Line a sheet pan with greased parchment paper or foil. Set aside.
In a large bowl, mix together oats, orange zest, flaxseeds, almonds, honey, orange essential oil, and coconut oil. Make sure all the ingredients are evenly coated.
Place in the oven and bake for 30-40 min. The granola should be golden brown when done.
Let the granola cool. When the granola is cooled, add the dried blueberries and mix.
