Fiji: Banana Fish Bake with Rice


Fiji is known for it’s beautiful beaches and rich culture and is also home to many delicious foods. There are more than 800 islands that make up Fiji.


Foods are usually steamed, boiled, and roasted. Common Fijian staples include taro, cassava, seafood, chicken, pork, beef, and assortments of tropical fruits. The cuisine of Fiji is influenced by India & China, and other surrounding cultures. 

The dish that I am presenting today is called Banana Fish Bake, which is a recipe that I found in a cookbook called World Cuisine at Home: International Family Menus & Recipes

Banana Fish Bake with Rice – Recipe adapted from World Cuisine at Home: International Family Menus & Recipes

4 White Fish Fillets ( I used cod)

salt & pepper, to taste

4 ripe bananas, peeled & sliced

1 onion, sliced

15 oz. can Coconut Milk

Preheat the oven to 350 F.

Place 4 pieces of aluminum foil onto a cookie sheet. Place a cod fillet onto each piece of aluminum foil and sprinkle with salt & pepper. 


Top with a layer of bananas and then onions.

Fold the aluminum foil to make a pouch and then pour the coconut milk over the fish.

Fold the foil and leave a small vent at the top.

Bake in the oven for 30 to 45 min. or until fish is cooked and tender.

Serve fish over rice.
