Almost Sugar Free Oatmeal Chocolate Chip Cookies (GF, DF)

Both my husband and I have a MONSTEROUS sweet tooth. Once I get started with eating sugary sweets, I just seem to spiral out of control and I find it hard to stop eating sweets once I start. Which is why I have decided to cut down/eliminate sugar from my life this year! Do I regret this? ABSOLUTELY NOT! Because I have discovered that using natural sugars from fruits for baking tastes even better and is more satisfying.

I teach a group of 3rd, 4th, and 5th grade girls at my church, and we are currently studying a unit on Cooking. They got very excited when I told them that they were going to get to bake cookies. But when I told them that the cookies were going to be Gluten Free, Dairy Free, and Sugar free, I had a couple girls turn up their noses like they thought it was going to be disgusting.

But they were pleasantly surprised at how great these cookies taste. So I would say that these cookies are both Adult approved & Kid Approved!

These cookies are sweetened by using date paste, which gives these cookies just the right sweetness. I also had some Maple Syrup on hand just in case the girls wanted just a tad more sweetness. They decided that using 1 tbsp. of Maple Syrup would do the trick and they were right!

But I couldn’t really get by with calling these cookies completely sugar free because there are GF, DF chocolate chips present in these cookies which has 5 grams of sugar.

I enjoy teaching and being in the kitchen with kids and I also think it’s important for kids to learn how to cook at a young age. But being in a kitchen with 7 Elementary age girls with various personalities can get a little chaotic, crazy, and silly, but it was still fun and I know they enjoyed it too!

Almost Sugar Free Oatmeal Chocolate Chip Cookies (GF, DF)

These Almost Sugar Free Cookies have just the right amount of sweetness. Plus they are kid approved too!

Ingredients

    Homemade Date Paste
  • 1 Cup Pitted Dates
  • Water
  • Oatmeal Chocolate Chip Cookies
  • 3/4 Cup Coconut Oil, melted
  • 3/4 Cup Date Paste
  • 1 tbsp. Maple Syrup (optional)
  • 1 tbsp. Vanilla Extract
  • 1 Egg
  • 1/4 Cup DF Milk of choice
  • 1 1/2 Cups GF All Purpose Flour
  • 1/2 Cup GF Oats
  • 1 tsp. Baking Soda
  • 1/4 tsp. Sea Salt
  • 2 tsp. Cinnamon
  • 1 Cup DF Chocolate Chips

Instructions

For the Date Paste

Place the dates in a bowl and pour just enough water on top for the dates to be covered. Let it sit overnight.

Drain the dates. Place the dates in a food processor or blender and puree until creamy.

For the Oatmeal Chocolate Chip Cookies

Preheat the oven to 350 F.

In a mixing bowl, mix together the melted coconut oil, date paste, and vanilla. Add in the egg and milk and mix to combine.

In a different bowl mix together the flour, oats, baking soda, salt and cinnamon. Add the dry ingredients to the wet ingredient mixture and stir until combined. If the mixture seems too dry you can add in 2 extra 2 tbsp. of DF milk. Mix in the chocolate chips.

Place greased parchment paper onto a cookie sheet. Place the cookie dough onto the baking sheet and press down the dough slightly.

Place the cookies in the oven and bake for 12-15 minutes.

Notes

If you don't want to use date paste, you can also substitute a couple of mashed bananas.
